Chef Tom started cooking when he was twelve years old and his mother got a full-time job. He and his older sister became responsible for some of the grocery shopping and for making supper several nights a week.
When he was 14, a couple for whom he was babysitting showed him their collection of Gourmet magazines and allowed him to borrow them - he hasn’t stopped reading cookery magazines and cookbooks for nearly 50 years now.
After 25 years of teaching himself about cooking he entered and graduated from the Culinary Institute of America in Hyde Park, NY.
As a professional chef his jobs included: omelette cook at a truck stop, church cook, garde manger cook at a hotel, prep cook at a fine-dining restaurant, catering chef, baker, menu manager for a college, and personal chef.
Chef Tom enjoys teaching all aspects of food preparation and presentation and has held demonstrations and had private students.
Among his favorite culinary subjects are evaluating and simplifying recipes, cooking meals for one, and making something good to eat from what’s on hand. He's the go-to guy when something goes wrong with your recipe and he loves food trivia.
